Prepare and marinate the mutton. In a large bowl, whisk the thick yogurt until smooth. Add ginger-garlic paste, raw papaya paste, mustard oil, all the spice powders (red chili, Kashmiri chili, coriander, cumin, garam masala, turmeric, kachri), and salt. Mix everything well to form a smooth marinade. Add the mutton cubes to the marinade and mix until each piece is thoroughly coated. Cover the bowl and refrigerate to marinate for at least 4 hours, or preferably overnight for the most tender results.

Smoke the marinated mutton (Dhungar method). Once marinated, take the mutton out of the refrigerator. Heat a small piece of charcoal on a direct flame using tongs until it is red hot and glowing. Place a small, heatproof bowl (like a steel katori) in the center of the marinated mutton. Carefully place the hot charcoal into the small bowl. Pour 1 tsp of ghee over the hot charcoal; it will immediately begin to smoke profusely. Quickly cover the main bowl with a tight-fitting lid to trap the smoke inside. Let it sit for 10-15 minutes to allow the mutton to absorb the smoky flavor.

Cook the Mutton Soola. Remove the lid and carefully discard the charcoal bowl. Thread the smoked mutton pieces onto metal or pre-soaked wooden skewers. Heat 2 tbsp of ghee or oil in a heavy-bottomed pan or griddle over medium-high heat. Place the mutton pieces (or skewers) in the pan without overcrowding. Cook for 15-20 minutes, turning every 3-4 minutes, until they are well-browned, slightly charred on the edges, and cooked through. Alternatively, grill on a preheated barbecue or in an oven at 200°C (400°F) for 20-25 minutes, turning and basting with ghee occasionally.

Garnish and serve. Once cooked, transfer the Mutton Soola to a serving platter. Garnish with fresh onion rings and chopped coriander leaves. Serve immediately with lemon wedges on the side for squeezing over the kebabs.

Prepare the Flour Mixture
In a large mixing bowl (parat), combine the whole wheat flour, sorghum flour, and gram flour. Whisk them together to ensure they are well mixed.
Add the dry spices: cumin seeds, turmeric powder, red chili powder, and salt. Mix again.

Knead the Dough
Add the finely chopped onion, green chili, grated ginger, and fresh coriander leaves to the flour mixture. Use your hands to incorporate them evenly.
Add 1 tablespoon of ghee to the mixture. Rub it in with your fingertips until it resembles coarse breadcrumbs. This process, called 'moyan', makes the roti softer.
Gradually add warm water, a little at a time, and knead to form a firm but pliable dough. The dough should not be too soft or sticky. Avoid over-kneading.
Do not rest this dough for a long time. Proceed to make the rotis within 5-10 minutes, as the onions will release water and make the dough sticky.

Shape and Roll the Rotis
Divide the dough into 8 equal-sized portions and roll them into smooth balls.
Take one ball and flatten it between your palms. Dust it lightly with dry whole wheat flour.

Prepare the Herbs (4 minutes)
Thoroughly rinse the mint and cilantro leaves under cold running water to remove any dirt or grit.
Pluck the mint leaves from their tough stems; discard the stems as they can be bitter.
For the cilantro, you can use the tender stems along with the leaves as they are full of flavor. Roughly chop the bunch.
Gently pat the herbs dry with a clean kitchen towel or paper towels to remove excess water.

Combine Ingredients in Blender (1 minute)
Place the prepared mint leaves, cilantro, green chilies (start with one for less heat), chopped ginger, roasted chana dal, lemon juice, salt, black salt, and sugar into a small, high-speed blender jar.

Blend to a Smooth Paste (3 minutes)
Add 2-3 tablespoons of ice-cold water or a couple of ice cubes. Using cold water is crucial to prevent the herbs from oxidizing and helps retain their vibrant green color.
Blend for 1-2 minutes, scraping down the sides of the jar with a spatula as needed, until you achieve a smooth, uniform paste.
If the chutney is too thick, add more cold water, 1 teaspoon at a time, and blend again until you reach your desired consistency. Be careful not to make it too watery.
Place it on a rolling board and gently roll it into a circle about 5-6 inches in diameter. These rotis should be slightly thicker than regular chapatis to prevent tearing.
If the edges crack, gently press them back together. You can also pat the dough with your palms to shape it.

Cook the Rotis
Heat a tawa (flat griddle) over medium-high heat. The tawa should be hot before you place the roti on it.
Carefully place the rolled roti on the hot tawa. Cook for about 45-60 seconds, or until you see small bubbles appear on the surface.
Flip the roti using tongs. Cook the other side for about 1-1.5 minutes until light brown spots appear.
Flip it again. Drizzle about 1/2 teaspoon of ghee on the top surface and spread it evenly with a spatula.
Flip once more, apply ghee to the other side, and gently press the roti with the spatula, especially around the edges, to ensure it cooks through evenly.
Cook until both sides are golden brown and crisp. Repeat the process for all the remaining dough balls.

Serve the Bejar ki Roti immediately while hot. It pairs wonderfully with Rajasthani gatte ki sabzi, lehsun ki chutney (garlic chutney), dal, or a dollop of white butter.
