   Boil and Prepare the Eggs

   • Place 8 large eggs in a saucepan and cover with cold water by at least an inch. Bring to a rolling boil over high heat.
   • Once boiling, reduce heat to a simmer and cook for 10 minutes for perfect hard-boiled eggs.
   • Drain the hot water and immediately transfer the eggs to an ice bath or run under cold water for 2-3 minutes to stop the cooking process.
   • Carefully peel the eggs and make 2-3 shallow, lengthwise slits on each one. This is crucial for them to absorb the masala flavors.

   Shallow-Fry the Eggs

   • Heat 1 tablespoon of vegetable oil in a wide, non-stick pan over medium-high heat.
   • Gently place the slit boiled eggs in the pan. Fry for 3-4 minutes, turning them occasionally, until they develop a light golden-brown, slightly crispy skin. This step adds a wonderful texture.
   • Remove the fried eggs from the pan and set them aside on a plate.

   Prepare the Masala Base (Tadka)

   • In the same pan, add the remaining 2 tablespoons of oil. Heat over medium heat.
   • Add 1 tsp of mustard seeds and 1 tsp of cumin seeds. Allow them to crackle and splutter for about 30 seconds.
   • Add 12 curry leaves and 5 slit green chilies. Sauté for another 30 seconds until the curry leaves are crisp and fragrant.

   Sauté Onions and Aromatics

   • Add 2 finely chopped medium onions to the pan. Sauté for 7-8 minutes, stirring frequently, until they turn soft, translucent, and start to brown at the edges.
   • Add 1.5 tsp of ginger-garlic paste and cook for 1-2 minutes, stirring continuously, until the raw aroma disappears.

   Cook Tomatoes and Spices

   • Add 2 finely chopped medium tomatoes. Cook for 5-6 minutes, mashing them with your spatula, until they break down and become soft and pulpy.
   • Reduce the heat to low. Add 0.5 tsp turmeric powder, 1.5 tsp red chili powder, 2 tsp coriander powder, and 1.25 tsp salt. Mix everything well.
   • Cook the masala for 3-4 minutes, stirring occasionally, until you see oil separating from the sides of the mixture.

   Combine and Finish

   • Return the shallow-fried eggs to the pan. Gently toss them with the masala until they are evenly coated.
   • If the masala feels too thick, sprinkle a few tablespoons of water (up to 1/4 cup) to reach a semi-dry consistency that clings to the eggs.
   • Cover the pan and let it simmer on low heat for 2-3 minutes. This allows the eggs to absorb all the spicy flavors.
   • Turn off the heat. Sprinkle 0.75 tsp of garam masala over the top and give it a final, gentle mix.
   • Garnish with 3 tbsp of freshly chopped coriander leaves and serve hot.
