   • In a heavy-bottomed medium saucepan, combine the rinsed rice, water, and the cinnamon stick.
   • Bring the mixture to a boil over medium-high heat.
   • Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the water.

   Infuse with Milks

   • Uncover the saucepan and pour in the whole milk, evaporated milk, and sweetened condensed milk.
   • Increase the heat to medium and bring to a gentle simmer, stirring constantly to dissolve the condensed milk and prevent the rice from sticking.
   • Once simmering, reduce the heat to medium-low. Cook uncovered for 20-25 minutes, stirring frequently, until the pudding has thickened to your desired creamy consistency. It will thicken more as it cools.

   Final Touches

   • Remove the saucepan from the heat.
   • Carefully locate and discard the cinnamon stick.
   • Stir in the vanilla extract and salt. The salt will balance the sweetness and enhance the flavors.

   Serve and Garnish

   • Ladle the warm Arroz con Leche into individual serving bowls.
   • Garnish with a sprinkle of ground cinnamon and raisins, if using.
   • Serve immediately for a warm, comforting dessert, or allow it to cool to room temperature before chilling in the refrigerator for at least 2 hours to serve cold.
