Caprese Sandwich

Instructions

   Prepare Ingredients (5 minutes)

   • Slice the ciabatta rolls in half horizontally.
   • Slice the tomatoes and fresh mozzarella into 1/4-inch thick rounds.
   • Gently pat the mozzarella and tomato slices with a paper towel. This is a crucial step to prevent a soggy sandwich.

   Assemble the Sandwiches (5 minutes)

   • If using, spread about 1 tablespoon of pesto evenly on the inside of each top and bottom slice of bread.
   • On the bottom half of each roll, layer the mozzarella slices, slightly overlapping them.
   • Arrange the tomato slices over the mozzarella.
   • Season the tomatoes with a pinch of salt and freshly ground black pepper.
   • Generously layer the fresh basil leaves on top of the tomatoes.
   • Place the top half of the roll on to complete the sandwich.

   Grill the Sandwiches (8-10 minutes)

   • Lightly brush the outside (top and bottom) of each sandwich with extra virgin olive oil.
   • Heat a large skillet, grill pan, or panini press over medium heat.
   • Carefully place the sandwiches on the hot pan. Cook for 4-5 minutes per side.
   • If using a skillet, you can press down gently with a spatula to help the cheese melt and the bread toast evenly.
   • The sandwich is ready when the bread is golden brown and crispy, and the mozzarella is fully melted and gooey.

   Rest, Garnish, and Serve (2 minutes)

   • Remove the sandwiches from the pan and let them rest for a minute. This allows the cheese to set slightly, making it easier to slice.
   • Gently open the sandwich and drizzle the balsamic glaze over the ingredients.
   • Slice the sandwiches in half diagonally and serve immediately while warm.
