Chicken Divan Casserole

   Prepare Ingredients & Preheat Oven

   • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch (or 3-quart) baking dish.
   • Steam or blanch the broccoli florets for 3-4 minutes until tender-crisp. Immediately drain thoroughly to remove all excess water and set aside.
   • Ensure your chicken is cooked and shredded into bite-sized pieces. If using raw chicken, boil or pan-sear until it reaches an internal temperature of 165°F (74°C), then shred.

   Create the Creamy Cheese Sauce

   • In a large saucepan or Dutch oven, melt 4 tablespoons of butter over medium heat.
   • Whisk in the all-purpose flour and cook for 1 minute, stirring constantly, to form a blond roux.
   • Gradually pour in the milk and chicken broth while whisking continuously to prevent lumps. Bring the mixture to a simmer.
   • Continue to cook, stirring frequently, for 5-7 minutes until the sauce has thickened enough to coat the back of a spoon.
   • Remove the saucepan from the heat. Stir in the shredded cheddar cheese until fully melted and smooth. Then, mix in the mayonnaise, dijon mustard, lemon juice, curry powder, salt, and pepper until well combined.

   Assemble the Casserole

   • Spread the well-drained broccoli florets in an even layer across the bottom of the prepared baking dish.
   • Distribute the shredded chicken evenly over the broccoli.
   • Pour the prepared cheese sauce over the chicken and broccoli, using a spatula to ensure everything is completely and evenly coated.

   Add Topping and Bake

   • In a small bowl, melt the remaining 2 tablespoons of butter. Add the panko breadcrumbs and grated parmesan cheese, and toss until the breadcrumbs are evenly moistened.
   • Sprinkle the breadcrumb mixture evenly over the top of the casserole.
   • Bake uncovered for 25-30 minutes, or until the sauce is hot and bubbly around the edges and the topping is golden brown and crisp.

   Rest and Serve

   • Remove the casserole from the oven and let it rest for 5-10 minutes. This allows the sauce to set slightly, making it easier to serve.
   • Serve warm as a complete meal or alongside cooked rice or egg noodles.
