Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch (or 3-quart) baking dish with butter or cooking spray.
Bring a large pot of salted water to a rolling boil. Add the egg noodles and cook for 2 minutes less than the package directions, until al dente. Drain well and set aside.
While the noodles are cooking, melt 4 tablespoons of butter in a large skillet or Dutch oven over medium heat. Add the chopped onion and celery and sauté for 5-7 minutes, until softened and translucent.
Stir in the condensed cream of chicken soup, cream of mushroom soup, milk, and sour cream until the mixture is smooth. Add the garlic powder, dried thyme, 1/2 tsp kosher salt, and black pepper. Bring the sauce to a gentle simmer, stirring occasionally, for about 2-3 minutes.
