   Prepare Ingredients & Cook Bacon

   • Wash and thoroughly dry the lettuce leaves. Slice the tomato and set aside.
   • In a large skillet over medium heat, cook the bacon slices until crisp, about 6-8 minutes, flipping once.
   • Transfer the bacon to a paper towel-lined plate to drain any excess grease. Leave about a tablespoon of bacon fat in the skillet.

   Toast the Bread

   • Melt the butter in the skillet with the bacon fat over medium heat.
   • Place all 6 slices of bread in the skillet (in batches if necessary) and toast for 1-2 minutes per side, until golden brown and crisp.
   • Remove the toast and lay it out on a clean cutting board.

   Assemble the First Layer

   • To build two sandwiches simultaneously, take two slices of toast for the bottom layer. Spread a thin, even layer of mayonnaise on one side of each.
   • On each slice, layer half of the turkey (about 85g) and top with a crisp lettuce leaf.

   Assemble the Second Layer

   • Take two more slices of toast for the middle layer. Spread mayonnaise on both sides of these slices.
   • Place one middle slice on top of each sandwich base.
   • On top of the middle slices, arrange 3 slices of crispy bacon, the remaining lettuce leaves, and the tomato slices.
   • Season the tomatoes with a pinch of salt and freshly ground black pepper.

   Finish, Secure, and Slice

   • Spread mayonnaise on one side of the final two slices of toast and place them mayo-side down to cap the sandwiches.
   • Gently press each sandwich down. Insert four long cocktail picks or small skewers through each sandwich, one in each quadrant, to hold it together.
   • Using a sharp serrated knife, carefully slice each sandwich diagonally into quarters. The picks will keep the layers intact. Serve immediately.
