In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved, about 3-4 minutes.
Add the cherry juice, lemon juice, cinnamon stick, and star anise to the saucepan. Bring the mixture to a gentle simmer, then immediately reduce the heat to low. Let it simmer for 10-12 minutes for the flavors to meld. Avoid a rolling boil.
Remove the saucepan from the heat. Carefully strain the syrup through a fine-mesh sieve into a jar or bowl to remove the whole spices. Stir in the vanilla and almond extracts. Allow the syrup to cool completely to room temperature before using.
