Egg Masala Toast

   Prepare the Masala Egg Batter

   • In a wide, shallow bowl large enough to dip a bread slice, crack the 4 eggs.
   • Add the milk and whisk vigorously until the yolks and whites are fully combined and slightly frothy.
   • Add the finely chopped onion, tomato, green chilli, and coriander leaves to the egg mixture.
   • Stir in the turmeric powder, red chilli powder, garam masala, salt, and black pepper. Mix thoroughly to ensure all the spices and vegetables are evenly distributed.

   Cook the Toast

   • Heat 1 tablespoon of butter in a non-stick skillet or tawa over medium heat. Swirl to coat the pan.
   • Take one slice of bread and gently dip it into the egg batter. Allow it to soak for about 10 seconds per side, ensuring it's well-coated but not overly saturated.
   • Carefully lift the coated bread slice, allowing any excess batter to drip off, and place it on the hot pan.
   • Cook for 2-3 minutes on the first side, until the bottom is golden brown and the egg is set.
   • Flip the toast carefully and cook for another 2-3 minutes on the other side until it's also golden brown and cooked through.

   Repeat and Serve

   • Remove the cooked toast from the pan and place it on a serving plate.
   • Repeat the process with the remaining bread slices, adding more butter to the pan for each new batch to prevent sticking and ensure a rich flavor.
   • Serve the Egg Masala Toast immediately while hot. It pairs wonderfully with tomato ketchup, mint chutney, or a hot cup of chai.
