Masala French Toast

   Prepare the Spiced Egg Batter

   • In a wide, shallow bowl, crack the 4 eggs and whisk them vigorously for about 30 seconds until light and frothy.
   • Pour in the milk and whisk again to combine.
   • Add the finely chopped onion, tomato, green chilies, and coriander leaves to the egg mixture.
   • Sprinkle in the turmeric powder, red chili powder, garam masala, and salt. Whisk everything together until the batter is uniformly mixed.

   Soak the Bread Slices

   • Take one slice of bread and dip it into the prepared batter.
   • Allow it to soak for 10-15 seconds on each side, pressing gently to ensure it absorbs the mixture and the vegetables adhere to the surface.
   • Be careful not to oversaturate the bread, as it can fall apart.

   Pan-Fry the Toast

   • Heat 1 tablespoon of ghee in a non-stick skillet or tawa over medium heat. The ghee should be hot enough to sizzle but not smoke.
   • Carefully lift the soaked bread slice from the batter, allowing any excess to drip off, and place it on the hot pan.
   • Cook for 2-3 minutes on the first side, until the egg is set and the bottom is a deep golden brown.
   • Flip the toast carefully and cook for another 2-3 minutes on the other side until it's also golden brown and cooked through.

   Repeat and Serve

   • Remove the cooked toast from the pan and place it on a serving plate.
   • Repeat the process for the remaining bread slices, adding more ghee to the pan as needed for each batch.
   • Serve the Masala French Toast immediately while hot, accompanied by tomato ketchup, mint chutney, or a cup of hot masala chai.
