Muttai Kalakki

Spicy, protein-packed Muttai Kalakki – a quick and easy comfort food that's truly soul-satisfying!

   Prepare the Egg Mixture

   • In a medium bowl, crack all 4 eggs.
   • Add the finely chopped onion, green chili, chicken salna, turmeric powder, black pepper powder, and salt.
   • Whisk vigorously for 1-2 minutes until the mixture is well combined, light, and slightly frothy. This incorporates air for a softer texture.

   Cook the First Kalakki

   • Heat 1 tablespoon of gingelly oil on a tawa or non-stick skillet over medium-high heat. The tawa should be quite hot.
   • Pour half of the whisked egg mixture onto the center of the hot tawa.
   • Allow it to cook undisturbed for about 30 seconds, just until the edges start to set and turn opaque.

   Fold and Finish

   • Using a flat spatula, quickly start folding the set edges in towards the center from all four sides, creating a square or round parcel.
   • The goal is to encase the runny, uncooked egg mixture in the center.
   • Let it cook for another 15-20 seconds. Do not press down or flip it over.
   • The inside should remain very soft, liquid, and gooey.

   Serve and Repeat

   • Immediately slide the finished kalakki onto a serving plate.
   • Garnish with half of the chopped coriander leaves.
   • Add the remaining 1 tablespoon of oil to the tawa and repeat the process with the remaining egg mixture to make the second kalakki.
   • Serve hot.
