Sausage and Cheese Strata

   Prepare Bread and Baking Dish

   • Generously grease a 9x13 inch (3-quart) baking dish with the softened butter.
   • For best results, use day-old bread. If your bread is fresh, spread the cubes on a baking sheet and bake at 300°F (150°C) for 10-15 minutes until lightly toasted and dry. This prevents a soggy strata.

   Cook Sausage and Aromatics

   • In a large skillet over medium-high heat, cook the breakfast sausage for 8-10 minutes, using a spoon to break it into small crumbles until it is browned and cooked through.
   • Add the chopped onion to the skillet and cook for 5-7 minutes, stirring occasionally, until softened and translucent.
   • Stir in the minced garlic and cook for 1 more minute until fragrant.
   • Drain off any excess grease from the skillet and set the sausage mixture aside.

   Assemble the Strata

   • Arrange half of the dried bread cubes in an even layer in the bottom of the prepared baking dish.
   • Sprinkle the cooked sausage mixture evenly over the bread.
   • Top with half of the shredded cheddar cheese (about 3/4 cup).
   • Layer the remaining bread cubes on top, followed by the remaining cheese.

   Prepare and Add the Custard

   • In a large bowl, whisk together the eggs, whole milk, heavy cream, dry mustard, kosher salt, black pepper, and paprika until the mixture is smooth and fully combined.
   • Carefully and evenly pour the egg custard over the assembled layers in the baking dish.
   • Gently press down on the top layer of bread with a spatula to ensure it is submerged and begins to absorb the liquid.

   Refrigerate and Soak

   • Cover the dish tightly with plastic wrap or foil.
   • Refrigerate for at least 4 hours, but preferably overnight. This step is crucial for the bread to fully absorb the custard, creating a creamy, cohesive texture.

   Bake the Strata

   • Preheat your oven to 350°F (175°C). Remove the strata from the refrigerator and let it sit at room temperature for 30 minutes while the oven heats up.
   • Cover the baking dish with foil and bake for 30 minutes.
   • Remove the foil and bake for an additional 25-30 minutes, or until the strata is puffed, golden brown, and the center is set. A knife inserted into the center should come out clean, and the internal temperature should reach 160°F (71°C).

   Rest and Serve

   • Let the strata rest on a wire rack for 10-15 minutes before slicing. This allows it to set, making it easier to serve.
   • Garnish with fresh chopped parsley just before serving for a touch of color and freshness.
