Teetar Curry with Bajra Roti

   Marinate the Partridge

   • In a large bowl, combine the partridge pieces, whisked curd, 1/2 tsp of the salt, 1/4 tsp of the turmeric powder, and 1/2 tsp of the red chili powder.
   • Mix thoroughly to ensure all pieces are evenly coated.
   • Cover the bowl and let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for deeper flavor penetration.

   Sauté Aromatics and Onions

   • Heat ghee and vegetable oil together in a heavy-bottomed pot or Dutch oven over medium heat.
   • Once hot, add the whole spices: cumin seeds, bay leaf, cinnamon stick, cloves, and black peppercorns. Sauté for about 30-40 seconds until they become fragrant.
   • Add the finely chopped onions and sauté, stirring occasionally, for 10-12 minutes until they turn a deep golden brown. This step is crucial for the curry's rich color and flavor.

   Prepare the Masala Base

   • Add the ginger-garlic paste and slit green chilies to the pot. Cook for 1-2 minutes until the raw aroma disappears.
   • Reduce the heat to low. Add the powdered spices: the remaining 1/4 tsp turmeric powder, remaining 1 tsp red chili powder, coriander powder, and cumin powder. Stir for 30 seconds to toast the spices without burning them.
   • Immediately add the tomato puree and the remaining 1 tsp of salt. Increase the heat to medium and cook the masala, stirring frequently, for 8-10 minutes until the oil begins to separate from the mixture at the edges.

   Sear and Cook the Partridge

   • Add the marinated partridge pieces along with the entire marinade to the pot.
   • Increase the heat to medium-high and sear the pieces for 5-7 minutes, turning them occasionally to brown them lightly on all sides.
   • Pour in 2 cups of hot water and stir well, scraping any browned bits from the bottom of the pot to incorporate them into the gravy.

   Slow-Cook the Curry

   • Bring the curry to a rolling boil, then immediately reduce the heat to the lowest setting.
   • Cover the pot with a tight-fitting lid and let it simmer gently for 45-55 minutes. The partridge is cooked when the meat is tender and pulls away from the bone easily.
   • Stir the curry every 15-20 minutes to prevent it from sticking to the bottom.

   Finish and Serve

   • Once the meat is tender, sprinkle the garam masala and chopped coriander leaves over the curry.
   • Stir gently to combine and let it simmer uncovered for another 2 minutes.
   • Turn off the heat and let the curry rest for at least 10 minutes before serving. This allows the flavors to meld and deepen.
   • Serve hot with fresh roti, naan, or steamed basmati rice.
