Veggie and Hummus Wrap

   Prepare the Vegetables (10 minutes)

   • Thoroughly wash and dry all the fresh produce.
   • Using a sharp knife, thinly slice the red bell pepper and red onion.
   • Julienne the cucumber and carrot. You can also use a vegetable peeler to create ribbons or a box grater for the carrot.
   • Pat the cucumber slices with a paper towel to remove excess moisture, which helps prevent a soggy wrap.

   Assemble the Wrap (3 minutes)

   • Lay a tortilla on a clean, flat surface.
   • Spread approximately 3 tablespoons of hummus evenly across the tortilla, leaving a 1-inch border around the edges to prevent spillage.
   • Place a generous handful of fresh spinach over the hummus.
   • Arrange the sliced bell pepper, cucumber, carrot, and red onion in a line down the center of the tortilla.
   • Sprinkle about 2 tablespoons of crumbled feta cheese over the vegetables.
   • Season lightly with a pinch of salt and freshly ground black pepper.

   Roll and Serve (2 minutes)

   • Fold the left and right sides of the tortilla inward, over the edges of the filling.
   • Starting from the bottom edge closest to you, tightly roll the tortilla upwards, tucking the filling in as you go to create a compact and secure wrap.
   • Repeat the assembly and rolling process for the remaining three tortillas.
   • For a clean presentation, slice each wrap in half on a diagonal with a sharp knife. Serve immediately.
