Amaretti-Style Cookies
These classic Italian Amaretti cookies are delightfully chewy on the inside with a crisp exterior, featuring a rich almond flavor and an authentic subtle bitter note from apricot kernels.
For 24 servings
Preheat your oven to 160°C (320°F). Line two baking sheets with parchment paper or silicone mats.
In a medium bowl, whisk together the almond flour, granulated sugar, finely grated bitter apricot kernels, and fine sea salt. Set aside.
In a separate, clean, dry bowl, using an electric mixer, beat the room temperature egg whites on medium-high speed until stiff, glossy peaks form. Be careful not to overbeat.
Gently fold the dry ingredient mixture into the whipped egg whites in two additions, using a spatula. Fold just until combined, being careful not to deflate the egg whites. The batter will be thick and sticky.
Transfer the batter to a piping bag fitted with a round nozzle (or use two spoons). Pipe small, roughly 2.5 cm (1-inch) rounds onto the prepared baking sheets, leaving about 2-3 cm (1 inch) between each cookie.
Bake for 15-20 minutes, or until the cookies are lightly golden brown around the edges and have developed characteristic cracks on top. They should feel firm to the touch.
Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before carefully transferring them to a wire rack to cool completely.
Once completely cooled, lightly dust the amaretti with powdered sugar before serving.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Ensure your egg whites are at room temperature and your mixing bowl is completely grease-free for optimal whipping volume and stability.
- 2When folding the dry ingredients into the egg whites, be gentle and avoid overmixing to prevent deflating the meringue, which can lead to flat cookies.
- 3For perfectly round and uniform cookies, use a piping bag. If you don't have one, two spoons can work, but the shape might be less consistent.
- 4Amaretti are best enjoyed after they have cooled completely, allowing their chewy texture to fully develop. Store them in an airtight container at room temperature for up to a week.

Frequently asked questions
Yes, you can omit them, but the authentic, subtle bitter almond note that defines traditional amaretti will be missing. If you wish to replicate it, you can add a tiny drop (less than 1/8 teaspoon) of bitter almond extract to the egg whites, but be very sparing as it can be overpowering.
