Chia Pudding with Berries (Diabetic & PCOS Friendly)
A creamy, fiber-rich chia pudding featuring mixed berries, unsweetened almond milk, and full-fat coconut milk. This version is crafted to be low in protein and supportive of blood sugar management for diabetic and PCOS diets.

Mix the pudding base.
In a large bowl or jar, whisk together the chia seeds, almond milk, almond butter, cinnamon powder, and salt until the almond butter is fully incorporated and there are no clumps.

Let the pudding set.
Cover the bowl or seal the jar and refrigerate for at least 4 hours, or preferably overnight. The chia seeds will absorb the liquid and thicken into a pudding-like consistency.
