Ensure your cannellini beans are thoroughly rinsed under cold water and well-drained. If not already toasted, spread the walnuts in a dry skillet over medium heat and toast for 3-5 minutes, stirring occasionally, until fragrant. Let cool slightly.
In the bowl of a food processor, combine the rinsed and drained cannellini beans, toasted walnuts, chopped garlic, fresh lemon juice, ground cumin (if using), 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
Process the mixture, scraping down the sides as needed, until a coarse paste forms. With the food processor running, slowly stream in 3 tablespoons of extra virgin olive oil.
