Dal with Paneer & Brown Rice

Wash and soak dal and rice.
1.Rinse toor dal and masoor dal together until water runs clear. Set aside.2.Wash brown rice in 2-3 changes of water, then soak in fresh water for 30 minutes. Drain and set aside. - pressure cook · ~15 min
Pressure cook the dal.
Combine the rinsed dals, 2 cups of water, turmeric powder, and 0.25 tsp of salt in the pressure cooker. Close the lid and cook on medium heat for 4 whistles. Let the pressure release naturally.

Cook the brown rice.
In a saucepan, bring 2 cups of water to a boil. Add the soaked and drained brown rice and a pinch of salt. Cover and simmer on low heat for 25-30 minutes until the rice is tender and water is absorbed. Fluff with a fork and keep aside.

Pan-fry the paneer cubes.
Heat 2 tsp oil in a frying pan over medium heat. Add paneer cubes in a single layer and cook for 2-3 minutes, turning occasionally, until they are lightly golden on all sides. Remove and set aside on a paper towel.

Mash the cooked dal.
Open the pressure cooker once the pressure has dropped. Whisk the cooked dal vigorously with a ladle until smooth and creamy. If it's too thick, add a splash of hot water to reach a pourable but not watery consistency.
