Prepare the berries.
Rinse all the berries under cool water. If using fresh strawberries, remove the green tops (hull) and slice them in half or quarters depending on their size.
TIPIf using frozen berries, you can use them directly without thawing.Gently cook the berries.
- Place all the berries in a small saucepan.
- Add the lemon juice. If you're using frozen berries, add the tablespoon of water.
- Turn the heat to medium-low and let the berries warm up, stirring occasionally.
TIPLow heat is key to prevent the berries from scorching before they release their juices.Mash to your desired consistency.
As the berries soften and release their juices (about 2-3 minutes), use the back of a spoon to gently press against some of them. Mash as much or as little as you like, leaving some berries whole for texture.
Serve or store the topping.
Once warmed through and slightly broken down, remove the saucepan from the heat. The topping is ready to be served warm. You can also let it cool completely and store it for later use.
TIPThe topping will thicken slightly as it cools.
