Wash the peaches, jalapeño, and cilantro thoroughly. Peel the red onion.
Carefully dice the ripe peaches into small, uniform pieces (about 1/4-inch), discarding the pit. Place them in a medium mixing bowl.
Finely mince the red onion. Add it to the bowl with the peaches.
For the jalapeño, remove the stem, slice it lengthwise, and scrape out the seeds and white membrane for a milder salsa. Finely mince the jalapeño, wearing gloves if you have sensitive skin, then add it to the bowl.
Roughly chop the fresh cilantro and add it to the bowl with the other ingredients.
Cut the lime in half and squeeze its juice over the salsa mixture. Add the sea salt and the optional granulated sugar.
Gently toss all the ingredients together until well combined. Be careful not to mash the peaches.
Cover the bowl and let the salsa rest at room temperature for at least 10-15 minutes, or chill in the refrigerator for 30 minutes, to allow the flavors to meld and deepen.
