Grated Amla & Yogurt Raita
This Grated Amla & Yogurt Raita is a quick, refreshing, and digestive side dish that balances the tartness of Indian gooseberry with creamy yogurt.
For 2 servings
Thoroughly wash the fresh amla under cold running water. Pat it dry with a clean kitchen towel.
Carefully cut around the seed of the amla with a knife to remove the flesh. Discard the seed.
Using the fine side of a grater, grate the amla flesh directly into a medium-sized mixing bowl.
Add the plain yogurt (full-fat or Greek) to the bowl with the grated amla. Stir gently to combine them evenly.
Incorporate the roasted cumin powder, black salt, and regular salt. Mix well until all ingredients are fully integrated and the raita is smooth.
If desired, garnish the raita with freshly chopped cilantro.
Serve immediately as a refreshing side dish, or chill in the refrigerator for at least 15-20 minutes before serving to allow the flavors to meld and enhance the cooling effect.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Choose firm, blemish-free amla for the best flavor and texture. Avoid any that feel soft or have dark spots.
- 2For a smoother raita, ensure your yogurt is at room temperature before mixing, or whisk it well before adding the amla and spices.
- 3If you find fresh amla too tart, you can blanch it briefly in hot water for 1-2 minutes before grating to slightly mellow its acidity.
- 4Adjust the amount of salt and cumin powder to your personal preference; a little extra black salt can really elevate the tanginess.
Adapt it for your goals.
Sweetened Version
For a sweeter raita, omit the black salt and add 1-2 teaspoons of honey or jaggery powder, adjusting to taste. This can be a refreshing dessert or snack.

Heat 1 teaspoon of ghee or oil in a small pan. Add 1/4 teaspoon mustard seeds and let them splutter. Add 2-3 curry leaves and a pinch of asafoetida (hing), then pour this tempering over the prepared raita for an aromatic boost.
