Wash and thoroughly dry the fresh basil leaves. Peel the garlic cloves.
In a food processor, combine the hemp hearts, fresh basil leaves, peeled garlic cloves, grated Parmesan cheese (if using), salt, and black pepper.
Pulse the mixture several times until the basil and garlic are finely chopped and the ingredients start to come together. Scrape down the sides of the bowl as needed.
With the food processor running on low speed, slowly drizzle in the olive oil through the feed tube until the pesto is smooth and emulsified. Continue blending until your desired consistency is reached.
Add the lemon juice and pulse a few more times to combine. Taste the pesto and adjust seasoning (add more salt, pepper, or lemon juice) as desired.
Transfer the pesto to an airtight container. It can be used immediately or stored in the refrigerator.
