This quick and vibrant High-Heat Chicken & Veggie Stir-fry uses a refined oil to achieve perfectly seared chicken and crisp-tender vegetables, all coated in a savory, umami-rich sauce.

Slice chicken breast against the grain into 1/2-inch strips. Chop broccoli into bite-sized florets. Slice bell pepper and yellow onion. Julienne or thinly slice carrots. Mince garlic and grate fresh ginger.
In a small bowl, whisk together low-sodium soy sauce, chicken broth, rice vinegar, honey (or brown sugar), and cornstarch until smooth. Set aside.
Heat 1 tablespoon of refined avocado or grapeseed oil in a large wok or skillet over high heat until it shimmers and just begins to smoke. Add the chicken in a single layer (cook in batches if necessary to avoid crowding) and stir-fry for 3-4 minutes until golden brown and cooked through. Remove the chicken from the wok and set aside.
Add the remaining 1 tablespoon of refined oil to the wok. Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant. Add carrots and yellow onion, stir-fry for 2-3 minutes until slightly softened.
