- Place the chopped carrots and potato in a steamer basket over boiling water, or in a saucepan with just enough water to cover.
- Cover and cook for 10-15 minutes until the vegetables are very soft and can be easily pierced with a fork.
- Drain any excess water completely.
TIPSteaming is preferred over boiling as it retains more nutrients and the natural sweetness of the carrots.Mash the cooked vegetables.
Using a potato masher or a fork, mash the cooked carrots and potato to your desired consistency. For a very smooth purée, you can use an immersion blender.
Make the tempering.
- Heat the ghee in a small pan over low-medium heat.
- Add the cumin seeds and let them sizzle for about 30 seconds, but don't let them burn.
- Add the pinch of asafoetida and turmeric powder and swirl the pan for a few seconds.
TIPKeep the heat low during tempering. Burnt spices will make the mash bitter.Combine everything.
Pour the hot tempering over the mashed vegetables. Add a pinch of salt (if using) and mix everything together until well combined.
Serve warm.
