Indian Coffee
Rich, frothy South Indian filter coffee made by brewing dark roasted coffee grounds in a traditional metal filter. The decoction is mixed with hot, sweetened milk and poured back and forth to create a creamy, aerated foam. A comforting, aromatic cup that's a morning ritual across South India.
For 2 servings
- prep · ~1 min
Prepare the coffee filter.
1.Place the filter coffee powder into the upper perforated chamber of the metal coffee filter.2.Press the powder firmly and evenly with the pressing disc.3.Assemble the filter: upper chamber with pressed powder, pressing disc on top, lower collection cup below. - prep · ~10 min
Brew the coffee decoction.
1.Bring 1.5 cups of water to a rolling boil in a kettle or saucepan.2.Slowly pour the boiling water into the upper chamber over the pressed coffee powder.3.Cover the filter with its lid and let it brew undisturbed for 8 to 10 minutes.4.The decoction will drip into the lower collection cup; you should get about 0.75 cup of strong decoction.TIPDon't rush the brew — the slow drip extracts deep, intense coffee flavor essential for authentic taste. - boil · ~3 min
Boil the milk with sugar.
In a saucepan, bring the milk and sugar to a boil over medium heat. Once it boils, reduce heat and simmer for 1 to 2 minutes until the sugar dissolves completely and milk develops a light creamy layer.
- mix · ~1 min
Combine decoction with sweetened milk.
Divide the brewed coffee decoction equally between two tumblers (about 3 to 4 tablespoons per cup). Pour the hot sweetened milk equally into each tumbler, filling them to about three-quarters full.
- mix · ~1 min
Froth the coffee by pulling it.
1.Pick up the tumbler and pour the coffee-milk mixture into the davara (wide metal cup) from a height of about 6 to 8 inches.2.Pour it back into the tumbler from the same height.3.Repeat this pouring back and forth 3 to 4 times until a thick, creamy froth forms on top.TIPThe height and speed of pouring create the signature foam — pour with confidence, not hesitation. - serve
Serve hot immediately.
Serve the frothy Indian coffee in the tumbler placed inside the davara. Enjoy hot with a crisp biscuit or as a morning pick-me-up.
What to keep in mind.
7 tips from the recipe — small details that make a real difference to the final dish.
- 1Use a dark-roast coffee powder blended with up to 30% chicory for authentic South Indian flavor.
- 2Press the coffee powder firmly with the disc, but don't tamp it rock-hard — water needs to seep through evenly.
- 3Boil the milk until it rises and forms a thin cream layer on top; this gives body to the final cup.
- 4Pour the milk from height into the decoction, not the other way around, for better blending.
- 5Pull (froth) the coffee immediately after mixing while both liquids are piping hot to get maximum foam.
- 6Use a davara (wide-rimmed metal cup) and tumbler set for the signature aeration — glass won't create the same froth.
- 7Make a batch of decoction ahead and refrigerate for up to 3 days; reheat and froth fresh milk daily.
Adapt it for your goals.
Dairy-free / lactose-free
Replace whole milk with oat milk or full-fat coconut milk; oat milk froths best when heated gently. Use jaggery or coconut sugar instead of white sugar for a deeper, caramel-like sweetness.
iced South Indian coffeeIced South Indian coffee
Brew a double-strength decoction, chill it, then pour over ice with cold sweetened milk. Froth with a handheld milk frother instead of pulling, as cold milk won't foam by pouring.
spiced (masala) coffeeSpiced (masala) coffee
Add a small piece of cinnamon, 2 crushed cardamom pods, and a pinch of nutmeg to the milk while boiling. Strain before mixing. This adds warm aromatic notes without overpowering the coffee.
low sugar or sugar freeLow-sugar or sugar-free
Use stevia or monk fruit sweetener to taste in the milk, or skip sugar entirely and let the natural sweetness of high-quality milk and chicory come through.
Why this is on our healthy list.
Natural Energy Boost
Provides a steady release of caffeine from dark-roasted coffee, improving alertness without the jitters often associated with instant coffee.
Rich in Antioxidants
Coffee is a top source of polyphenols and chlorogenic acid, which help neutralize free radicals and support overall cellular health.
Bone-Friendly Calcium
Full-fat milk contributes a good amount of calcium and vitamin D for bone strength, especially when boiled, which slightly concentrates the nutrients.
Chicory's Digestive Support
If made with chicory-blend powder, the inulin fiber in chicory acts as a prebiotic, supporting healthy gut bacteria and digestion.
Frequently asked questions
Instant coffee won't produce the same decoction or froth; you'll get a watery, less aromatic drink. For authentic taste, use Indian filter coffee powder with chicory.
