In a small bowl, gently stir together the plain Greek yogurt with the optional honey (or maple syrup), vanilla extract, and ground cinnamon until well combined.
Grab a tall glass or jar (about 12-16 oz capacity). Spoon approximately half of the flavored Greek yogurt mixture into the bottom.
Evenly distribute half of the chopped jackfruit over the yogurt layer, spreading it out gently.
Sprinkle half of the slivered almonds on top of the jackfruit layer, adding a pleasant crunch.
