Last-Minute Pizza Topper
Elevate any cooked pizza with this vibrant, fresh, and zesty arugula topping, added right after it comes out of the oven for a burst of flavor and texture.
For 4 servings
Ensure your pizza is cooked according to its package instructions or your preferred method, and is hot and ready to be served.
While the pizza is cooking or immediately after it comes out of the oven, gently wash the fresh arugula under cold water and thoroughly dry it using a salad spinner or by patting it with paper towels.
In a medium-sized mixing bowl, combine the dried arugula with the fresh lemon juice, extra virgin olive oil, a pinch of sea salt, and a pinch of freshly ground black pepper.
Toss the arugula gently until it is lightly coated with the dressing. Be careful not to overdress, as you want the arugula's peppery flavor to shine.
If using prosciutto, tear or slice it into smaller, bite-sized pieces.
As soon as the hot pizza is removed from the oven, immediately pile the dressed arugula mixture generously over the entire surface of the pizza.
Distribute the prosciutto pieces evenly over the arugula, if using. If desired, sprinkle with shaved or grated Parmesan cheese.
Slice the pizza into individual servings and serve immediately to enjoy the contrast between the hot pizza and the cool, crisp topping.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Don't dress the arugula too far in advance; it's best tossed just before topping the pizza to maintain its crispness and prevent wilting.
- 2For best results, ensure the pizza is piping hot when the topping is added. The residual heat will slightly warm the arugula without cooking it.
- 3If you don't have prosciutto, crispy bacon bits, thinly sliced salami, or even toasted pine nuts can be excellent savory additions.
- 4Experiment with different greens! Baby spinach, watercress, or a mixed spring green blend can also work well, though arugula's peppery kick is unique.
Adapt it for your goals.
Spicy Kick
Add a pinch of red pepper flakes to the arugula dressing for a subtle heat, or finely chop a small fresh chili.

Incorporate crumbled feta cheese, thinly sliced red onion, and a few Kalamata olives into the arugula mix for a Mediterranean flair.
Nutty CrunchNutty Crunch
Toast a tablespoon of pine nuts or chopped walnuts and sprinkle them over the top along with the arugula for added texture and richness.
