Prepare the litchis by peeling them, carefully removing the pit, and then halving each litchi. Set aside in a large mixing bowl.
Wash the English cucumber thoroughly. Using a mandoline or a sharp knife, thinly slice the cucumber into rounds or julienne it into thin strips. Add to the bowl with the litchis.
Peel the red onion and slice it very thinly, preferably using a mandoline for uniform slices. For a milder onion flavor, you can soak the slices in cold water for 5 minutes, then drain well before adding to the bowl.
In a small separate bowl, whisk together the fresh lime juice, sea salt, red chili flakes, and optional honey or maple syrup until well combined. This is your dressing.
Pour the prepared dressing over the litchis, cucumber, and red onion in the large mixing bowl. Add the roughly chopped fresh mint leaves and fresh cilantro.
