Prepare the mint: Wash the fresh mint leaves thoroughly. Gently bruise them by clapping them between your palms or lightly crushing them with the back of a spoon to release their aromatic oils without tearing them too much.
Combine in pitcher: Place the prepared litchis and bruised mint leaves into a clean 1.5-liter pitcher or glass jar.
Add water: Pour 1 liter of cold filtered water over the litchis and mint.
Infuse: Stir gently to combine. Cover the pitcher and refrigerate for a minimum of 30 minutes to allow the flavors to meld. For a stronger flavor, infuse for 2-4 hours.
