Preheat your oven to 300°F (150°C). If you don't have an oven, you can dry roast all ingredients in a large heavy-bottomed pan or wok over medium-low heat, stirring frequently.
In a large bowl, toss the raw makhana with 1 tablespoon of ghee or olive oil, 1/2 teaspoon of salt, 1/2 teaspoon of turmeric powder, and 1/4 teaspoon of black pepper until evenly coated.
Spread the seasoned makhana in a single layer on a baking sheet. Roast in the preheated oven for 10-12 minutes, stirring halfway through, until they are crispy and lightly golden. They should snap easily when broken. Remove from oven and set aside to cool.
In the same bowl, combine the almonds, walnuts, cashews, pumpkin seeds, and sunflower seeds with the remaining 1 tablespoon of ghee or olive oil.
Spread the nut and seed mixture on a separate baking sheet. Roast in the oven for 8-10 minutes, stirring halfway through, until they are fragrant and lightly golden. Be careful not to burn them. Remove from oven and set aside to cool completely.
Once the makhana, nuts, and seeds are completely cooled (this is crucial for crispness), transfer them to a large mixing bowl.
Add the dried cranberries, chaat masala, and red chili powder (if using) to the bowl.
