Moong Vegetable Khichdi
A comforting, one-pot meal of brown rice and yellow lentils cooked with soft vegetables and mild spices. This soft-textured khichdi is light on the stomach, perfect for a wholesome and easily digestible lunch.

Prepare the rice, dal, and vegetables.
- Rinse the moong dal and brown rice together under running water until the water runs clear.
- Soak them in water for at least 30 minutes. Drain before use.
- While they soak, wash, peel, and dice the bottle gourd and carrot.

- Heat ghee in a 3-liter pressure cooker over medium heat.
- Add the cumin seeds and let them splutter.
- Add the asafoetida (hing) and grated ginger. Sauté for 30 seconds until fragrant.

Add the diced bottle gourd, carrots, and green peas to the cooker. Sauté for 2 minutes.
Combine all ingredients.

- Pour in 4 cups of water and mix everything well.
Pressure cook the khichdi.
Secure the lid of the pressure cooker. Cook on medium heat for 4-5 whistles. Let the pressure release naturally.
