Add the rolled oats, pitted dates, unsweetened cocoa powder, chia seeds, vanilla extract, and sea salt to a high-speed food processor fitted with an S-blade.
Process on high for 1-2 minutes, scraping down the sides occasionally, until the mixture starts to break down and become crumbly.
Add the creamy natural peanut butter to the food processor. Continue to process until a sticky, uniform dough forms. It should stick together when pressed between your fingers.
If the mixture appears too dry or crumbly and doesn't hold together, add water one tablespoon at a time and pulse until the desired consistency is reached.
Using clean hands, roll the dough into approximately 12-15 bite-sized balls, about 1-inch in diameter. If the mixture is too sticky, lightly dampen your hands with water.
Place the rolled energy bites on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up.
