Peanut & Jaggery Energy Bites
A traditional Indian no-bake sweet, these Peanut & Jaggery Energy Bites (Mungfali Gur Ladoo) are incredibly easy to make with just two core ingredients, offering a quick and wholesome energy boost.

Ensure your peanuts are already roasted and cooled. If starting with raw peanuts, spread them on a dry pan over medium heat and roast for 5-7 minutes, stirring frequently, until fragrant and lightly browned. Let them cool completely, then rub them between your palms to remove the skins.
Place the roasted, skinless peanuts into a high-speed blender or food processor. Pulse several times until they are coarsely ground, resembling a coarse meal. Be careful not to over-process at this stage, as you want some texture, not a smooth butter.
Add the grated jaggery to the food processor with the ground peanuts. If using whole jaggery, chop it finely before adding.
Process again, using short pulses, for about 1-2 minutes. The natural oils from the peanuts will start to release, and the jaggery will combine, causing the mixture to clump together and form a sticky, dough-like consistency.
Stop processing when the mixture holds its shape when pressed firmly between your fingers. It should feel slightly oily and cohesive. If it's too dry, process for a few more seconds until more oils are released.
Transfer the mixture to a clean bowl. Take small portions (about 1 tablespoon each) and firmly roll them between your palms to form compact, smooth balls, approximately 1 to 1.5 inches in diameter.
Continue rolling until all the mixture is used up. You should get about 12-15 energy bites.
Arrange the finished energy bites on a plate or in an airtight container. Serve immediately or store for later enjoyment.
