These Pistachio & Cardamom Energy Bites are a no-bake, healthy snack packed with natural sweetness from dates, wholesome oats, and the delightful crunch of pistachios, all elevated by aromatic cardamom.

If your Medjool dates are very firm or dry, soak them in warm water for 5-10 minutes, then drain thoroughly and pat dry with a paper towel. This ensures a smooth blend.
In a food processor, combine the old-fashioned rolled oats and shelled pistachios. Pulse until they form a coarse, crumbly mixture, resembling a coarse flour. Be careful not to over-process into a paste.
Add the pitted Medjool dates, ground cardamom, creamy almond butter, vanilla extract, and sea salt to the food processor with the oat and pistachio mixture.
Process on high speed, scraping down the sides of the bowl as needed, until the mixture comes together into a sticky, cohesive dough. It should be firm enough to roll into balls and hold its shape.
Scoop out approximately 1 tablespoon of the mixture for each bite. Roll the mixture tightly between your palms to form uniform, round balls.
If desired, place the unsweetened shredded coconut (or finely chopped pistachios) in a shallow dish. Roll each energy bite in the coconut or pistachios to coat evenly.
Arrange the finished energy bites on a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up, which makes them less sticky and improves their texture.
Serve chilled directly from the refrigerator. Store any leftover energy bites in an airtight container in the refrigerator for up to 1-2 weeks, or freeze for longer storage.
