Prepare and ferment the ragi idli batter
- Soak the idli rice and the urad dal with fenugreek seeds in separate bowls for 4 hours.
- Grind the soaked ingredients with minimal water to create a smooth, thick batter.
- Whisk in the ragi flour and salt, then allow the mixture to ferment in a warm place for 8 hours.

- Lightly grease the idli mould cavities with a drop of oil.
- Pour the fermented batter into each mould, filling them about three-quarters full.
- Steam in a preheated steamer for 12 minutes until a toothpick comes out clean.
