Gently peel the rambutan fruits, remove the large central seed, and cut each fruit in half. Set aside.
Wash the fresh mint leaves thoroughly. Place them in the palm of your hand and gently clap your hands together once or twice to bruise the leaves slightly; this releases their aromatic oils without tearing them.
Thinly slice the lime into rounds or half-moons.
In a large pitcher (approximately 1.5-liter capacity), combine the prepared rambutan halves, bruised mint leaves, and lime slices.
Pour 1 liter of cold filtered water over the fruit and herbs in the pitcher.
Stir gently to ensure all ingredients are submerged. Cover the pitcher and refrigerate for a minimum of 1 hour, or preferably 2-4 hours, to allow the flavors to fully infuse.
For best flavor, serve the infused water chilled over ice. You can strain out the fruit and mint before serving, or leave them in for a more aesthetic presentation.
