This refreshing Sabja Lemonade combines the tangy zest of fresh lemon with the natural sweetness of honey and the unique, chewy texture of gelatinous basil seeds, creating a perfect hydrating drink.
For 2 servings
In a small bowl, combine the sabja seeds with 1 cup of water. Stir gently and let them soak for at least 15-20 minutes, or until they swell up and form a gelatinous coating.
While the seeds are soaking, prepare the lemon juice. Squeeze fresh lemons to yield about 1/2 cup of juice, straining any pulp or seeds.
In a pitcher or directly into two tall serving glasses, combine the freshly squeezed lemon juice and the honey (or maple syrup). Stir well until the sweetener is fully dissolved.
