Thinly slice half of the lemon into rounds, discarding the ends.
Gently bruise the fresh rosemary sprigs by rolling them between your palms or lightly pressing them with the back of a spoon. This helps to release their aromatic oils more effectively.
Place the lemon slices and bruised rosemary sprigs into a clean 1-quart pitcher or glass jar.
Pour 1 quart of cold filtered water over the ingredients in the pitcher.
Stir gently to combine. Cover the pitcher and refrigerate for at least 2 hours, or up to 4 hours, for optimal flavor infusion. Infusing longer than 4-6 hours can sometimes lead to a slightly bitter taste from the lemon rind.
