Savory Kimchi Scramble
This savory, protein-packed breakfast introduces the vibrant flavors of fermented kimchi in a delicious and quick-to-prepare scramble. The healthy fats from avocado provide sustained energy, making it a satisfying start to your day.
For 1 serving
Prepare your ingredients: Roughly chop the kimchi if the pieces are too large. Thinly slice the scallion, separating the white and green parts. Slice or dice the avocado.
In a small bowl, whisk the eggs vigorously with a pinch of salt, black pepper, and the optional tablespoon of water or milk until well combined and slightly frothy. This helps create fluffier eggs.
Heat a non-stick skillet over medium heat. Add the neutral cooking oil and swirl to coat the bottom of the pan.
Pour the whisked eggs into the hot skillet. Let the eggs set for about 15-20 seconds without stirring. Then, using a spatula, gently push the cooked edges towards the center, allowing the uncooked egg to flow underneath. Continue this process, folding and scrambling gently, until the eggs are mostly set but still slightly moist and creamy. Do not overcook.
Immediately slide the scrambled eggs onto a serving plate.
Arrange the chopped kimchi, sliced avocado, and sliced scallions (both white and green parts) over the top of the eggs.
If desired, drizzle with 1/2 teaspoon of toasted sesame oil for an added nutty aroma.
Serve hot and enjoy immediately for the best flavor and texture.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Don't overcook your eggs: Scrambled eggs are best when they are just set and still slightly moist. Remove them from the heat a little before they look fully cooked, as they will continue to cook from residual heat.
- 2Quality Kimchi Matters: Use a good quality, well-fermented kimchi for the best flavor. If your kimchi is very watery, drain some of the liquid before adding it to the plate.
- 3Gentle Scramble: For soft, fluffy eggs, use a rubber spatula and gently push the eggs around the pan rather than aggressively stirring them.
- 4Heat Control: Keep the heat at medium. Too high heat can lead to dry, rubbery eggs, while too low heat can make them watery.
Adapt it for your goals.
