Simple Spiced Poached Quince
This recipe transforms humble quince into a tender, ruby-hued delight, simmered gently with aromatic spices and lemon peel for a naturally sweet and fragrant treat with no added sugar.

Wash quinces thoroughly to remove any fuzz. Using a sharp paring knife, peel the skin from each quince. Halve each quince, then use a spoon or melon baller to carefully remove the tough core and seeds. Cut each half into 2-3 wedges, resulting in 4-6 pieces per quince.
Immediately place the prepared quince pieces into a large, non-reactive saucepan or pot (stainless steel is ideal) to prevent browning.
Add the cinnamon stick, star anise, and lemon peel to the pot with the quince. If desired, you can also add 2-3 green cardamom pods or a 1/2 vanilla bean.
Pour enough cold water over the quince to fully submerge the fruit (typically 4-6 cups, or 1-1.5 liters).
Bring the water to a gentle simmer over medium-high heat. Once simmering, reduce the heat to low, cover the pot, and cook for 60-90 minutes, or until the quince pieces are fork-tender and have turned a beautiful rosy pink or ruby red color. Cooking time will vary based on the ripeness and size of the quince.
Carefully remove the quince pieces from the poaching liquid using a slotted spoon. Arrange them in a serving bowl.
Strain the poaching liquid to remove the spices and lemon peel. You can reduce this liquid slightly over medium heat for a more concentrated syrup, if desired, then pour it over the poached quince.
Serve warm or at room temperature. Enjoy plain, or with a dollop of Greek yogurt, crème fraîche, or a scoop of vanilla ice cream.
