Simple Tomato & Feta Salad
This vibrant, no-cook Tomato & Feta Salad is the epitome of summer simplicity, combining juicy tomatoes, salty feta, and aromatic fresh oregano with a bright olive oil and vinegar dressing.
For 4 servings
Wash the tomatoes thoroughly. If using larger tomatoes, core them and chop into bite-sized pieces (about 1-inch cubes). If using cherry or grape tomatoes, simply halve them. Place the prepared tomatoes into a medium-sized mixing bowl.
Take the block of feta cheese and either gently crumble it directly into the bowl with the tomatoes or cut it into 1/2-inch cubes. Add to the bowl.
Wash the fresh oregano sprigs, pat them dry with a paper towel, and then finely chop the leaves. Add the chopped oregano to the bowl with the tomatoes and feta.
Drizzle the extra virgin olive oil and red wine vinegar evenly over the ingredients in the bowl.
Season the salad with sea salt and freshly ground black pepper. Remember that feta cheese is naturally salty, so add the sea salt cautiously and taste before adding more.
Using a large spoon or spatula, gently toss all the ingredients together until they are well combined. Be careful not to mash the tomatoes or break up the feta too much.
For the best flavor, allow the salad to rest at room temperature for 5-10 minutes before serving. This brief resting period allows the flavors to meld beautifully.
Serve immediately as a refreshing side dish, light lunch, or appetizer. It pairs wonderfully with grilled meats, crusty bread, or as part of a Mediterranean mezze platter.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Use ripe, in-season tomatoes for the best flavor. Heirloom tomatoes or a mix of different colored cherry tomatoes can also add visual appeal.
- 2For a creamier texture, use a softer, less aged feta cheese. If you prefer a firmer texture, a traditional Greek feta in brine works well.
- 3Don't over-mix the salad; a gentle toss is all that's needed to combine ingredients without mashing the delicate tomatoes or feta.
- 4Adjust the amount of olive oil and vinegar to your preference. A 2:1 ratio of oil to vinegar is a good starting point for a balanced dressing.
Adapt it for your goals.
Mediterranean Twist
Add 1/2 cup sliced cucumber, 1/4 cup pitted Kalamata olives, and a quarter-cup of thinly sliced red onion for a more robust Greek-style salad.
Herb SwapHerb Swap
Substitute fresh basil or mint for oregano, or use a combination of all three, to introduce different aromatic notes.
Spicy KickSpicy Kick
Add a pinch of red pepper flakes or a finely diced small jalapeño for a subtle heat that complements the fresh flavors.

Frequently asked questions
While best served fresh, you can chop the tomatoes and crumble the feta a few hours in advance. Store them separately in the refrigerator and combine with the dressing and oregano just before serving to prevent the tomatoes from becoming watery.
