Skillet-Charred Corn
Achieve a delicious smoky, charred flavor for corn kernels in just minutes using a hot skillet, perfect as a quick side dish or a versatile topping for various meals.
For 4 servings
Place a heavy-bottomed skillet, preferably cast iron, over high heat and allow it to preheat for 2-3 minutes until it's smoking lightly. This high heat is crucial for charring.
Add the olive oil (or butter) to the hot skillet, swirling to coat the bottom. Immediately add the corn kernels in a single layer. If using frozen corn, do not thaw it first.
Allow the corn to cook undisturbed for 2-3 minutes. Resist the urge to stir, as this is how the kernels develop their deep, charred spots.
After 2-3 minutes, stir the corn once, scraping up any browned bits from the bottom of the pan. Continue to cook for another 2-3 minutes, stirring occasionally, until most of the kernels are tender-crisp and have a good amount of charring.
Remove the skillet from the heat. Season the charred corn with salt, black pepper, and chili powder (if using). Stir well to combine.
For an extra burst of freshness, squeeze the juice from half a lime over the corn and sprinkle with fresh chopped cilantro, if desired.
Serve immediately as a vibrant side dish, or use as a topping for tacos, salads, grain bowls, or quesadillas.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Use a cast-iron skillet: Its superior heat retention and distribution are key to achieving the best char. A stainless steel skillet can work, but may require slightly longer cooking.
- 2Don't overcrowd the pan: Cook the corn in a single layer. If you're making a larger batch, cook in two separate batches to ensure proper charring instead of steaming.
- 3High heat is your friend: Ensure your skillet is very hot before adding the corn. This creates the Maillard reaction quickly, leading to deep flavor and char.
- 4Adjust seasoning: Taste the corn after cooking and adjust salt, pepper, and chili powder to your preference. A touch of smoked paprika can also enhance the smoky flavor.
Adapt it for your goals.
