Soothing Ash Gourd Juice
This Soothing Ash Gourd Juice is a simple, raw, and hydrating drink traditionally consumed first thing in the morning to calm the digestive system and cool the body.
For 1 serving
Prepare the ash gourd: Wash the ash gourd thoroughly. Using a sharp knife or peeler, carefully remove the thick outer skin. Cut the gourd in half or quarters and scoop out all the seeds and fibrous core. Chop the remaining white flesh into 1-inch cubes.
Juicing method: If using a juicer, feed the ash gourd cubes through the juicer according to its instructions. Collect the fresh juice in a glass.
Blending method (alternative): If using a blender, place the chopped ash gourd cubes into the blender jar. Add the 1/2 cup of cold water (and optional ginger/mint leaves). Blend on high speed until completely smooth, about 1-2 minutes.
Strain (if blending): For a smoother, pulp-free juice, pour the blended mixture through a fine-mesh sieve or a nut milk bag into a clean glass. Press down on the pulp with a spoon to extract all the liquid. Discard the remaining pulp.
Season and serve: Stir in the pinch of black salt or sea salt and freshly ground black pepper. If desired, add fresh lemon juice.
Serve immediately: Consume the ash gourd juice immediately after preparation to enjoy its maximum nutritional benefits and cooling properties.
What to keep in mind.
4 tips from the recipe — small details that make a real difference to the final dish.
- 1Choose a firm, blemish-free ash gourd that feels heavy for its size. Avoid any with soft spots or discoloration.
- 2For best results, drink ash gourd juice first thing in the morning on an empty stomach. Wait at least 30 minutes before consuming any other food or drink.
- 3Ash gourd juice is best consumed fresh. Its nutritional value and cooling properties diminish rapidly upon exposure to air, so avoid storing it.
- 4If using a juicer, ensure it's clean before and after use to maintain hygiene and prevent flavor transfer. For blenders, a quick rinse immediately after blending prevents pulp from drying and sticking.
Adapt it for your goals.

Why this is on our healthy list.
Cooling and Hydrating
Ash gourd is renowned for its high water content and cooling properties, making it excellent for balancing body heat, especially in warm climates or during Pitta imbalances.
Supports Digestive Health
Its alkaline nature helps soothe the digestive tract, reduce acidity, and promote healthy bowel movements. The fiber (if consumed with pulp) aids in gut regularity.
Detoxification and Diuretic
Ash gourd acts as a natural diuretic, assisting the body in flushing out toxins and excess water, thereby supporting kidney function and overall detoxification.
