Soursop Yogurt Parfait
A vibrant and nutritious Soursop Yogurt Parfait, layering creamy Greek yogurt with the unique tangy-sweet flavor of soursop pulp and a satisfying crunch of nuts, perfect for a high-protein breakfast or snack.
For 1 serving
If using frozen soursop pulp, ensure it is fully thawed. If using fresh soursop, carefully remove any large, black seeds and fibrous core, then mash the pulp lightly with a fork.
In a small bowl, combine the Greek yogurt with maple syrup (if using) and vanilla extract (if using). Stir until well combined and smooth.
Take a tall glass or jar. Spoon half (about 100g) of the prepared Greek yogurt mixture into the bottom, spreading it evenly.
Carefully spoon half (about 60g) of the soursop pulp over the yogurt layer.
Sprinkle half of the chopped almonds and half of the chia seeds (if using) over the soursop layer.
Repeat the layering process: add the remaining Greek yogurt, followed by the rest of the soursop pulp.
Finish by sprinkling the remaining chopped almonds and chia seeds on top.
Serve immediately for the best texture, or chill for up to 30 minutes to allow flavors to meld slightly.
