Southern Stewed Okra & Tomatoes

If using bacon, cook the chopped bacon in a large heavy-bottomed pot or Dutch oven over medium heat until crispy. Remove the bacon with a slotted spoon, reserving the rendered fat in the pot. Set the crispy bacon aside for garnish. If not using bacon, add 1 tablespoon of olive oil to the pot and heat over medium.
Add the chopped yellow onion to the pot and sauté for 5-7 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Stir in the sliced okra. Cook for 5-7 minutes, stirring frequently, until the okra begins to soften slightly and some of its natural sliminess starts to reduce. This initial sauté helps to minimize the 'slime' in the final dish.
Pour in the undrained diced tomatoes, chicken or vegetable broth, salt, black pepper, and granulated sugar (if using). If you like a little heat, add the hot sauce now.
Bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and cook for 20-25 minutes, or until the okra is very tender and the stew has thickened to your desired consistency. Stir occasionally to prevent sticking to the bottom of the pot.
Taste the stew and adjust seasonings as needed, adding more salt, pepper, or a pinch of sugar if desired. Serve hot, garnished with the reserved crispy bacon (if used) or a sprinkle of fresh chopped parsley or chives.
