Wash the apricots thoroughly, then halve them, remove the pits, and roughly chop them into bite-sized pieces.
Place the chopped apricots into a small, heavy-bottomed saucepan. Add the water, cinnamon stick, star anise, fresh lemon juice, vanilla extract (if using), and a pinch of sea salt.
Stir gently to combine all ingredients. Place the saucepan over medium-low heat and bring the mixture to a very gentle simmer.
Once simmering, reduce the heat to low, cover the saucepan partially (leaving a small gap for steam to escape), and cook for 10-12 minutes.
Stir occasionally to prevent sticking and ensure even cooking. The apricots should become very soft and release their juices, creating a thick, syrupy consistency.
Once the apricots are tender, use a fork or potato masher to gently mash some of the fruit directly in the saucepan. Mash to your desired consistency, leaving some chunks for texture or mashing more for a smoother compote.
Carefully remove and discard the cinnamon stick and star anise from the compote.
