Wash all fresh produce thoroughly. Peel the ginger.
Chop the starfruit into star-shaped slices or smaller pieces, removing any seeds.
Add the coconut water to the blender first, followed by the spinach. This helps the blades catch the greens more efficiently.
Add the chopped starfruit, frozen mango chunks, frozen banana, peeled ginger, and chia seeds to the blender.
Secure the lid and blend on high speed for 60-90 seconds, or until completely smooth and creamy. Scrape down the sides if necessary.
If the smoothie is too thick, add additional coconut water, 1/4 cup at a time, and blend again until your desired consistency is reached.
