Tropical Rambutan & Mint Salad

Prepare Rambutans: Carefully peel the outer skin from each rambutan. Using a small paring knife, make a shallow incision around the seed and gently twist to remove the seed, keeping the fruit intact as much as possible. Place the prepared rambutan flesh in a medium mixing bowl.
Dice Mango: Peel the mango and carefully cut the flesh away from the pit. Dice the mango into approximately 1/2-inch (1.25 cm) cubes and add to the bowl with the rambutans.
Dice Pineapple: Remove the tough outer skin and fibrous core from the fresh pineapple. Dice the pineapple flesh into similar 1/2-inch (1.25 cm) cubes and add to the bowl.
Prepare Mint: Wash the fresh mint leaves thoroughly. Pat them dry with a paper towel and finely chop them. Add the chopped mint to the fruit mixture.
Add Lime Juice: Cut the lime in half and squeeze the juice of the entire lime over the fruit and mint. Ensure no seeds fall into the salad.
Gently Toss: Using a spoon or spatula, gently toss all the ingredients together until well combined, ensuring the lime juice and mint are evenly distributed throughout the fruit.
