Add the minced garlic, dried oregano, and dried thyme to the pot. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
Stir in the vegetable broth, rinsed and drained cannellini beans, and bay leaf. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for 15-20 minutes to allow the flavors to meld.
Carefully remove about 1 cup of the soup (mostly beans and broth) and transfer it to a small bowl. Mash the beans with a fork or use an immersion blender to create a creamy paste. Return the mashed mixture to the pot; this will naturally thicken the soup.
Add the chopped kale to the pot. Stir well to submerge the kale in the hot liquid. Cook for 5-7 minutes, or until the kale is tender and wilted.
