Prepare the pineapple. If using a whole pineapple, trim the top crown and bottom. Stand it upright and carefully slice off the peel from top to bottom, following the fruit's curve. Remove any remaining 'eyes' with the tip of a knife. Cut the pineapple into 1-inch bite-sized chunks, discarding the tough central core. You should have about 4 cups.
Combine ingredients. Place the pineapple chunks in a large mixing bowl. Drizzle the fresh lime juice over the pineapple and toss gently to coat.
Add Li Hing Mui powder. Sprinkle 1 tablespoon of the li hing mui powder over the pineapple. Toss again until the fruit is evenly dusted. Taste a piece and add the remaining 1/2 tablespoon of powder if you desire a stronger, more intense flavor.
Chill and meld flavors. For the best taste, cover the bowl and refrigerate for at least 30 minutes before serving. This allows the pineapple to release some of its juices, which then mix with the powder to create a delicious coating.
